Baby Led Weaning was a new discovery for me a few months back, and what a time saver.  Liam has taken to it like a baby duck to water.  He eats and eats and eats.  He’s the one person in the house who eats lots of vegetables and loves them….i think he eats more than me.  One of his favourites is carrot and sweet potato in pesto.

When I first started with this whole idea, I read about making slices of porridge, but mine always turned out dry and yucky.  So I changed it up a bit and used some of my Pampered Chef kit.

Here is my general recipe:

1/4 cup quick cook porridge oats

1/2 an apple

1/2 tsp cinnamon

1/4 cup water or baby milk

Chop or grate the apple up and mix in a bowl with the other three ingredients.  Microwave on high for 90 seconds. Use a small scoop to create little dots of porridge, then leave until cool enough for baby to eat.

There are lots of ways to change this up, I’ve used blueberries, pear and banana instead of the apple.  If I’m organized enough I may cook several apples and pears and freeze them in small portions so that I can just add a cube of frozen fruit to the other ingredients.

I love cooking and eating. Well actually it’s a bit of a love/hate thing. Cause when I cook I want the food to be appreciated, to be enjoyed and a compliment or two will not go unappreciated. Perhaps the compliment is too much to ask? Is it selfish to want your cooking to be appreciated?
The hate part of it is that I married a man who is a picky eater, a texture eater, refined taste…whatever you want to call it; it drives me nuts. Vegetables are the enemy. What’s worse is that now our daughter has become picky, even more so than hubby. So I’m starting to be outnumbered. Trying to find a meal that will satisfy my dearest husband, my tantrum throwing daughter and also fit into my diet plan is a daily stress.

So I ask myself, Do I view my cooking as an extension of my creativity, something to be enjoyed and admired? Whereas, others view it as ‘just food’, just a necessary part of keeping alive?
These ramblings bring me to the beautiful soup I made today. I boiled down the leftover turkey with some celery that was going soft in the veg drawer. Then later removed the bones and added some rice, carrots and beans – basically whatever I had in the fridge. It was so yummy, I ate two bowls full; which was good since we headed off to a party after and I was so satisfied I wasn’t much bothered about the party food.
